Place pulled BBQ chicken on a bun, top with coleslaw and serve with a Coke and you’ve got yourself an effortless meal perfect for those busy school nights.
Have your kids started school yet? My son started kindergarten last week and the transition has been easier than I thought. The first few days were a little rough…on me that is, since I’m not use to him being gone all day. I don’t hear him and his sister bickering back and forth but I also don’t hear their laughter as they use their imaginations to play either. The days have been long and I cannot wait for the end of the day to pick him up and hear how his day went. So far, he loves school and each night cannot wait to go back in the morning. I can hope the enthusiasm lasts all year-long!
So while it’s been a little bit of a transition for us, I’ve found a whole new level of freedom and more time on my hands. So what’s a girl to do with all this free time? Well lemme tell you. I can go to the gym, shop with my daughter, hit up the grocery store and still be back home by noon. Who knew I could accomplish so much?
HA! this is where my picture perfect day gets a little smudged. My son’s school is close to our house, so my daughter and I have been walking to pick him up each day. Since the weather in central Illinois has been so beautiful lately, I find myself spending as much time outside as I possibly can. Like right now while writing this post. Anyways, so we get back home after picking my son up when he says he’s hungry for a snack. Granola bar, orange, apple, carrots, take your pick, we’ve got snacks galore. Then it dawns on me, I forgot dinner. Here I am lollygagging about my day like I have no care in the World and I forgot to make dinner plans. “Kids, jump in the car, we’re headed to Wal-Mart, mama forgot dinner!”
I’m cruising down the aisles thinking, what to make, what to make and then in the back deli section I see the sign for the Effortless Chicken Meal. Yep, that’s dinner, I pronounced!
I grabbed a fully cooked rotisserie chicken, coleslaw and a 2 liter of Coke Zero which were all part of the Rotisserie Chicken Meal. While back by the deli, I couldn’t help but also notice, the delicious looking Marketside Pizzas. They also have a Marketside Pizza Meal deal that comes with a 2L Coca Cola product! I made a mental note. There were so many to choose from and my family loves pizza. Next time I forget dinner, I’m purchasing a Stuffed Crust Pepperoni Pizza-yum!
I also picked up a package of buns and figured I’d de-bone the chicken, throw in some BBQ sauce and place it on the buns and then top them with coleslaw. That’s my favorite way to eat any sort of pulled meat; with lots of barbecue sauce and creamy coleslaw.
When I got home, I pulled all the meat off the chicken. I placed it in a bowl and started to work on my homemade barbecue sauce. This BBQ sauce is simple and easy to make but in case you want an even quicker effortless meal, you can use store-bought barbecue sauce. I whisked together the barbecue sauce using ingredients I already had on hand. I threw the pulled chicken into a pot and poured in the sauce. I let it simmer for about 1o minutes just until everything was heated through.
These pulled chicken sandwiches with homemade BBQ Sauce were simple and delicious. My dilemma of forgetting dinner was quickly remedied by this effortless meal thanks to Wal-Mart. It was quick to put together, my family loved it and still left us time to get to football practice. Touchdown! (sorry I couldn’t resist)
Oh and don’t forget, Coke is best shared with family and friends! 😉
Pulled Chicken Sandwiches with Homemade BBQ Sauce

Pulled Chicken Sandwiches with Homemade BBQ Sauce come together quickly for an effortless meal that is perfect for those busy back to school nights.
Ingredients
- 1 Rotisserie chicken, meat pulled off
- 1 2 lb container coleslaw
- 1 package 8 count buns
- Homemade BBQ Sauce(recipe follows)
- 1/4 cup prepared yellow mustard
- 1/4 cup sugar
- 2 Tablespoons light brown sugar
- 1/3 cup apple cider vinegar
- 2 Tablespoons water
- 1 tablespoons/30 mL chili powder
- 1/2 teaspoon black pepper
- 1/2 teaspoon white pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1 teaspoon hot sauce, optional (adjust to your liking)
- 1 teaspoon soy sauce
- 1 tablespoons butter
- 1 tablespoon liquid smoke
Instructions
- For Homemade BBQ Sauce
- Whisk together mustard through hot sauce in a small sauce pot and cook over low heat for 20 minutes stirring occasionally.
- Add the soy sauce, butter and liquid smoke and continue to cook for 10 more minutes.
- Makes 1 1/4 cup
- For Pulled Chicken
- Place pulled chicken into a medium sauce pot and add the entire recipe of homemade bbq sauce
- Cook over medium heat until heated through about 10 minutes.
- To assemble sandwiches
- Placed your BBQ pulled chicken on the bottom bun, topped with coleslaw (and chips if desired) and add top half of bun.
- Serve with additional chips, coleslaw or pickle slice.
