The weather is changing around here, folks! We had a high of 60 degrees this past weekend. It was pretty chilly. To be honest, I’m not ready for freezing weather, I mean it can only mean one thing….winter is on the horizon and as I’ve mentioned before, I loathe winter.
What I do love though, is brisk mornings, sitting out on the back deck with a warm cup of coffee and breakfast. Specifically the breakfast you see here, pumpkin coffee and pumpkin spice latte scones. I love scones and pumpkin scones are my favorite. My love affair with them started when I worked at a well-known, well loved coffee shop and their pumpkin scones are to die for. It would always be the first scone to leave the pastry case in the morning and although it’s pumpkin flavored, we carried it all year-long.
I love the holidays! I love to decorate the house with fun festive knick knacks and sweet-smelling candles, surprise the kids with holiday themed gifts and {LOVE!} the food offerings each holiday brings! One of the many things I love about Target, especially round the holidays, aside from their amazing decor, is their exclusive grocery items. In particular, these Pumpkin Spice Latte M&M’S®. They are only available for a limited time and exclusively available at Target. Gosh are they a treat! And right now there’s a sweet bonus Cartwheel offer on them so you can try them and save money too, YAY! Oh, how I love Target!
So I went to Target and headed to the seasonal section to pick up some Pumpkin Spice Latte M&M’S® and was feeling extra pumpkin-y that day. I also picked up some Pillsbury® Perfectly Pumpkin Cake Mix, Pillsbury® Cream Cheese Frosting and Dunkin’ Donuts® Pumpkin Spice Coffee. I don’t mess around with the flavors of the holidays come rolling in! And I can’t forget to mention, both Pillsbury baking and Dunkin’ Donuts each have Cartwheel savings, SCORE!
These Pumpkin Spice Latte Scones are my shortcut version made with a boxed cake mix and added chocolate and latte flavoring from the M&M’s Pumpkin Spice Latte. These scones couldn’t be easier to make, requiring little ingredients and a quick bake in the oven.
First you start with your boxed cake mix and some flour. To the mix, you’ll add in 1 stick of butter and blend with your pastry cutter until small crumbs form. Next, make a well in the center of your dry ingredients and add in milk, stirring until it’s just combined. Next, fold in your Pumpkin Spice Latte M&M’S®. Turn mixture out onto a flour surface and flatten into a 10″ circle. Mine was about 1/4″ thick.
Next, I cut the dough in half, and then cut it in half again. I then take each quarter and cut it in half, leaving me with 8, somewhat equal, triangles. Place them on a baking sheet lined with a Silpat and bake in a 400 degree oven for 18-20 minutes.
When the scones are finished baking, allow them to cool completely on a wire rack. When they are cool enough to handle, prepare your cream cheese frosting. You’ll mix the frosting with some water and cinnamon, whisk to combine and voila, done. Dunk your scones into the frosting and lift up. I made sure to run a knife over the frosting so it was spread evenly throughout. You can allow the frosting to harden or enjoy right away.
These scones are the perfect way to start your morning. They are full of flavor, sweet, buttery, tender…everything a scone should be. I highly recommend them paired with a hot beverage. Like I mentioned before, I enjoyed mine with Dunkin’ Donuts® Pumpkin Spice Coffee which only intensified the pumpkin flavor more.

Ingredients
- For the scones
- 2 cups Pillsbury Perfectly Pumpkin Premium Cake Mix
- 1 cup All purpose flour
- 1 stick of butter, cold and cut into cubes
- 1 cup milk, I used heavy cream
- 1/2 M&M's® Pumpkin Spice Latte
- For the glaze
- 1 16 ounce container Pillsbury Cream Cheese Frosting
- 1/4 teaspoon cinnamon
- 2 tablespoons water
Instructions
- For the scones
- Preheat oven to 400 degrees and line a baking sheet with parchment paper or a Silpat and set aside
- In a medium bowl, combine cake mix and flour.
- Add in your cubed butter and using a pastry cutter or two forks, cut up the butter into the flour until it resembles course meal.
- Create a well in the center of your bowl and add in your milk. Mix to combine.
- Fold in M&M's® just until combined as the colors will start to bleed out into your dough.
- Turn out dough onto floured surface and spread out until you have a 10" circle about 1/4" thick
- Cut your circle in half, and then in half again, in the other direction. Cut each quarter in half and you should have 8 equal triangles.
- Place the triangles on your prepared baking sheet and bake 18-20 minutes or until lightly golden brown.
- Allow scones to cool on baking sheet for 10 minutes and then transfer to a wire rack to finish cooling.
- When cool enough to handle, dip each scone into the glaze and smooth with a knife.
- Place back onto the wire rack for frosting to completely set or enjoy immediately.
- For the glaze
- Combine all ingredients in a medium size bowl and whisk to combine.
- This makes a thicker glaze. If you'd like it thinner, slowly add more water until you've reached your desired consistency.
