It’s November aka the best food month there is. Bring on the turkey and the fixin’s! I’m a huge fan of Thanksgiving and hosting it at my house every year brings me so much joy. I love when my whole family gets together, eats, drinks and browses through the Black Friday ads. Ahhh, I can smell the sales now… and the turkey!
My kids have been asking if it’s Christmas for the last 2 months and scream, “I want that!” for every toy commercial that comes on. They are lucky I love Christmas…and them. ? There is nothing that can dampen my spirits around this time. There is just so much to love around the holidays from the food, the people and the love, it’s truly the most wonderful time of the year!
The holiday season is my favorite. It starts with Halloween and continues all the way through the winter. I’m a January baby so the holidays keep rolling right through around here.
I start planning my Thanksgiving menu before Halloween. I have a system. I break out all the Fall food magazines I can possibly find, which I have a bookcase full of them, and start with appetizers all the way through dessert. My mom always had a large appetizer table first thing in the morning so I’ve followed in her footsteps and do the same.
We’re a big fan of Wasa crackers in this household and I recently saw they were coming out with Wasa Thins Rosemary & Sea Salt variety. I couldn’t find these babies fast enough. Lucky for me, they were at my local Kroger.
Rosemary is one of my favorite flavors and around the holidays, it’s perfect. I was in need of another appetizer but wanted to transform the Wasa crackers into something other than just a vehicle for a dipper or a topping for the cracker. I decided I’d make them into cracker cups and stuff them with flavors that pair well with rosemary. That’s how, Rosemary Cracker Bites with Goat Cheese, Kale and Potatoes, were born.
It’s a long name, but it’s all packed into 1 delicious little bite. The smell of rosemary wafts from the package and I couldn’t try one fast enough. The sprinkling of sea salt is delicious on top of these Wasa Thins Rosemary & Sea Salt crackers. They’re also packed with 9 grams of whole grains and made a delicious side item for the soup i was enjoying for lunch that day.
I started by placing the Wasa crackers into the food processor to pulverize them into crumbs. Once they were finely crumbled, I added in butter and an egg white.
(Also, I need a new food processor. this little one has served me well for a few years but she’s on the brink. Any recommendations for a food processor you love?)
Then I placed them into mini muffin cups, pressed the dough up the sides and baked them for 5 minutes.
Meanwhile, I sautéed some kale in olive oil, diced the potatoes and placed everything into a bowl with the goat cheese.
When the cups came out of the oven, I placed 1 teaspoon of filling into each cup and placed them back into the oven for 8 minutes.
The combination of kale, goat cheese, potatoes and rosemary in these cracker cups screams the holiday! The rosemary in the Wasa Thins Rosemary & Sea Salt crackers is fragrant and delicate and it’s the perfect flavor to pair with your holiday spread this year.

Rosemary Cracker Bites with Goat Cheese, Kale and Potatoes are the simplest and most delicious appetizer for your next holiday gathering!
Ingredients
- 1 package Rosemary & Sea Salt Wasa Thins (I used 1 package)
- 5 tablespoons butter, melted
- 1 egg white
- 4 ounces kale
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- salt and pepper
- 4 ounces goat cheese, room temperature
- 1 small potato, finely diced
Instructions
- In a food processor, add 1 package Rosemary & Sea Salt Wasa Thins. Pulse until fine crumbs.
- Add in melted butter followed by the egg white.
- Preheat the oven to 350 degrees
- Grease a mini muffin tin with cooking spray.
- Add 1 tablespoon of the cracker crumb mixture to each well of the mini muffin tin.
- Using your fingers press the dough up the sides of the well, making sure to press the dough together to form a cup.
- Bake in the oven for 5 minutes.
- While the cups bake, in a medium skillet, add olive oil and garlic and saute for 30 seconds to 1 minute or until fragrant.
- Add in kale, toss to coat in garlic oil mixture. Saute for 5 mins and season with salt and pepper. Place into a bowl.
- Add in goat cheese and potatoes to the bowl with the kale. Stir to combine.
- Place 1/2 teaspoon of the goat cheese mixture into each cracker cup.
- Bake for 5-7 minutes or until the tops are golden brown.
- Allow to cool completely in pan and then remove to a wire rack.
Cuisine Appetizer
The crunchy rosemary cracker cups are the perfect bowl for the delicious goat cheese, kale and potato filling. These will not last on your appetizer table. If you have time, I would also stuff them with some caramelized onions to give them that sweet, onion-y bite. These Rosemary Cracker Bites with Goat Cheese, Kale and Potatoes are quick, easy and packed with flavor. I hope they make an appearance on at least 1 of your holiday tables this year!
Again, we love Wasa crackers in this house! There is so much flavor packed into these crackers, we always have some on hand. No only are they yummy, they’re a low calorie crunchy snack, loaded with fiber and whole grains so it’s a snack you can feel good about feeding your friends and family!
