But let’s get back to these Skinny Raspberry Coconut Mojitos. Lime and mint make me a happy girl. The combination is light, refreshing and crisp. I decided to pair these flavors with the Torani Sugar Free Raspberry syrup, coconut water and coconut rum.
This recipe is for a batch of raspberry coconut mojitos. Therefore, the entire pitcher will make 8 servings which is perfect so you don’t have to play bartender all night long.
Not only are these Skinny Raspberry Coconut Mojitos delicious, they’re sugar-free and no one would know the difference.
I served these up last weekend while we had some friends over for some swimming and they received rave reviews.

Ingredients
- 1/2 cup lime juice
- 17.5 ounces coconut water
- 1 1/2 cups coconut rum
- 1/2 cup Sugar Free Raspberry Torani Syrup
- 1 liter Club Soda
- Fresh raspberries and mint for garnish
Instructions
- Into a large pitcher, place lime juice, coconut water, coconut rum and Sugar Free Raspberry Torani Syrup. Stir to combine.
- Slowly pour club soda into pitcher. Add fresh raspberries and chopped mint if desired.
- Place a few frozen raspberries* into the bottom of a high ball glass and pour in Skinny Raspberries Mojitos.
*Cooks Tip: Place raspberries on a sheet tray and pop into the freezer until frozen. A delicious and easy way to avoid a watered down cocktail!
