It’s Saturday and it’s game day. Where can you find us and all of our friends? Gathered around the t.v. rooting for our team and devouring a hearty and warm bowl of Smoked Sausage and Beer Cheese Soup.
I didn’t grow up in Wisconsin, but a few hours South of the border, but that didn’t stop us from making a cheese stop and dropping a few dollars every time we were close.
Now just because we eat a lot of cheese, don’t call us cheese heads. We don’t root for anyone up there, we’re from Chicago, Illinois, ahem, so you know what colors we’re sporting.
Regardless of who you cheer for, one thing is for certain, you’re there for the food and it better be good.
Now that the weather has officially turned, it’s nice to bring something to game day that’s warm and comforting.
I love to bring soup. Whether it’s a crockpot full of Chili, Chicken and Wild Rice Soup or this Smoked Sausage and Beer Cheese Soup. one thing is for certain is I’m bringing comfort food.
When we host at our house, I like to set up a big table full of a variety of foods with one being the “star.” In addition, I like to set out chips, dip, appetizers, drinks and dessert.
I head to my local Meijer to stock up on game day essentials. For us that means grabbing a few packs of Diet Dr Pepper, located in the soda aisle. It’s what my husband and other fans crave for game day and it’s the perfect complement to tailgating and homegating events during the college football season.
The Dr Pepper packaging features footballs and on the cans too so not only are they great for sipping during the game, they double as festive décor.
I also head to the packaged meat aisle and grab a few varieties of Eckrich Smoked Sausage because it’s not only amazing in this soup, it’s perfect for tailgating or family dinner night. It’s naturally hardwood smoked and crafted with just the right blend of spices for a truly rich, savory taste.
Being from the Midwest and the temperatures being chilly, a delicious soup is always a good idea. Smoked Sausage and Beer Cheese Soup is one of our favorites. It’s filled with hearty ingredients like Eckrich Smoked Sausage, broccoli, carrots, beer and cheese.
We love to top ours with popcorn and cheese curds because in our World you can never have too much cheese or football! Soup is ready, so dig in!
Smoked Sausage and Beer Cheese Soup

This smoked sausage and beer cheese soup is bursting with smoked sausage, sharp cheddar and beer that’s stick to your ribs hearty and delicious! | Strawberry Blondie Kitchen
Ingredients
- 2 tablespoons butter
- 2 cups broccoli florets
- 1 cup carrots, shredded
- ½ cup onion, diced
- 3 cloves garlic, minced
- ¼ cup flour
- ½ teaspoon dry mustard
- ½ teaspoon salt
- ¼ teaspoon pepper
- 2 cups milk
- 4 ounces cream cheese
- 13 ounces Eckrich Smoked Sausage, sliced into ½” pieces
- 2 cups sharp cheddar cheese
- 1 cup chicken stock
- 1 cup beer (choose a light red or brown ale)
Instructions
- In a large stockpot, melt butter and add onion and garlic. Sauté 2-3 minutes and then add in broccoli and carrots and stir to combine.
- Sprinkle in flour and seasonings and cook for 1 minute.
- Slowly add the milk, stirring to combine.
- Add cream cheese and stir until melted.
- Add in remaining ingredients, bring to a boil until thickened and reduce heat to a simmer. Cook until heated through.
- Top with popcorn, additional cheese or cheese curds (the best!)
