So, for my first recipe post I thought I would be totally cliché and impart the two names in which my blog name came from; strawberry and blondie.
To be honest, I hated being a red head when I was little. I was the only one in my 4th grade class with red hair and I just wanted to be like everyone else. Doesn’t everyone at that age just want to blend in?!
I begged my mother to let me dye my hair, just like all the girls were doing, but she refused. “You have the color of hair chicks pay for!” she would say. FINE, I’d storm away to my room. We’d go through this year after year, but I still begged, “Just highlights, please!” You know, the blonde streaky ones all the girls were doing in high school. (hello early 2000’s) “When you move outta my house, you can dye your hair”
And you know what, to this day, 13 years after moving out of her house, I haven’t put one smidgen of color in my hair. You know what, and I stutter to say this…she was RIGHT. Girls do pay for that perfect strawberry blonde hair color and I’ve had it all along. So thanks mom, for never letting me conform to all the other girl’s and the blonde streaky look we all cringe looking back on now.
So in honor of being a strawberry blond(ie) and truly embracing my hair color, I’ve officially named my blog after it and am sharing my first recipe inspired by it.

When I was thinking of this recipe, I hadn’t ever had or heard of a strawberry white chocolate blondie before. I didn’t want the bar to be mushy using real strawberries, and I’d previously used freeze dried strawberries in a bar before, so I figured they be the perfect addition to your standard white chocolate blondie recipe. I was right. Love when that happens.

I am such a sucker for a good blondie recipe but I also love a delicious brownie, I mean chocolate, HELLO. The difference between the two…butter and who doesn’t love butter?! Now pair that with white chocolate and the addition of the sweet, chewy freeze dried strawberries and you’ve got yourself one delicious treat.
These bars had the crispness of a cookie on the top, a chewy, sweet center and an almost slightly under done consistency. They were irresistible. I kept telling myself I wouldn’t eat another one, but I couldn’t resist. So.darn.good.
Just look at that ooey, gooeyness of that brown sugar. It really does make all the difference to use dark brown sugar over light brown sugar. It makes for a richer, more decadent bar.

Strawberry White Chocolate Blondies
Yield 9 -12 depending how large you cut your bars
This soft buttery cookie bar with sweet white chocolate paired with chewy strawberries is bursting with flavor. These are a match made in heaven
Ingredients
- 1 1/2 cups dark brown sugar
- 1 stick unsalted butter, melted
- 2 eggs
- 1 tsp vanilla
- 1/2 tsp salt
- 1 1/2 cups all purpose flour
- 1/2 tsp baking powder
- 1 cup white chocolate chips
- 1 oz freeze dried strawberries
Instructions
- Preheat the oven to 375 degrees F and spray an 8 x 8 inch pan with cooking spray and set aside.
- In a medium bowl, stir together melted butter and brown sugar until smooth. Stir in the eggs, one at a time, until combined. Stir in, vanilla and salt and set aside.
- In another bowl, whisk together dry ingredients; flour and baking powder.
- Add dry ingredients to the bowl of wet ingredients and mix until just combined.
- Stir in white chocolate chips and strawberries and mix until just incorporated.
- Pour batter into prepared pan and bake for 20-25 minutes until golden brown on the top.
Notes
*I baked mine for 23 mins and they were perfect. Start to check them at 20 mins and continue cooking until browned. Mine looked under cooked but were the perfect consistency for a chewy, soft bar.

Do you think this recipe work with fresh strawberries? Really looking forward to making this myself, and have a lot of fresh strawberries at home now.

Yes, I think they could work, although I have never tried them. I would gently fold the strawberries into the batter before pouring them into your pan. Also, I would probably cut the strawberries in quarters so they aren’t so finely chopped. If you make these, please let me know how they turned out, I’m curious to know. TY!
