And that’s just what I did with these Twice Baked Cubano Stuffed Potatoes
INGREDIENTS YOU’LL NEED TO MAKE THESE TWICE STUFFED POTATOES
- Olive oil
- Salt and pepper
- Baking potatoes
- Cream cheese
- Smithfield Anytime Favorites Diced Ham
- Mustard
- Cumin
- Garlic powder
- Pickles
- Swiss cheese

HOW TO MAKE THESE QUICK TWICE STUFFED POTATOES
- Start by placing your baking potatoes into the microwave for 12 minutes.
- Meanwhile, into a bowl, add cream cheese and Smithfield Anytime Favorites Diced Ham.
- Next, add in mustard, cumin, garlic powder, pickles and swiss cheese. Mix to combine
- Once the potatoes are cooled, cut in half lengthwise and scrap out the middles, leaving a border.
- Add the potatoes to the cream cheese mixture and stir to combine.
- Truth be told, I could eat this bowl as is and call it twice baked mashed potatoes!
Add potato mixture into the wells of the potatoes and top with additional Swiss cheese.
Place into the oven and bake for 15 minutes or until cheese is melted and potatoes are warmed through.
Serve with additional mustard if you’re into that sort of thing.

They’re super cheesy, have the flavors of a Cubano sandwich and the diced ham brings the entire filling together to make for one tasty dinner.
We like to serve baked potatoes with a simple salad to round out the meal.
CAN YOU MAKE THESE TWICE BAKED POTATOES AHEAD OF TIME?
Yes. You can make these ahead of time, wrap tightly and place into the refrigerator for up to 3 days. Top them with the cheese right before baking.
Yes, you can freeze stuffed potatoes. Simply place filled potatoes into freezer and freeze until solid, about 1 hour. Wrap potatoes into saran wrap or foil and then place into a freezer bag or storage container and freeze for up to 3 months.
TIPS FOR THE PERFECT TWICE BAKED POTATO
Scrub the outside of your potatoes with water to wash and pat dry
Rub olive oil all over the potatoes and sprinkle generously with salt and pepper. Afterall, you can eat the skin of the potato so it might as well taste good too!
Make sure to prick the potato all over with a fork so that it has room for the steam to escape and the potatoes cook evenly.
Flip the potatoes half way through cooking.
If you do not have a microwave, you can still make these twice baked potatoes by cooking them in the oven at 400 degrees F for 1 hour, turning every 20 minutes.
Twice Baked Cubano Stuffed Potatoes
If you’ve got thirty minutes, you’ve got time to whip up these Twice Baked Cubano Stuffed Potatoes. They’re stuffed with diced ham, cheese, pickles and mustard.
Ingredients
- Olive oil
- Salt and pepper
- 4 baking potatoes
- 1 (8oz brick) Cream cheese
- 1 (8oz package) Smithfield Anytime Favorites Diced Ham
- 1 tablespoon yellow mustard
- ½ teaspoon cumin
- ½ teaspoon garlic powder
- ¼ cup pickles, chopped
- 1 cup Swiss cheese, divided
Instructions
- Preheat oven to 400 degrees F.
- Rub olive oil all over the potatoes and sprinkle with salt and pepper
- Prick baking potatoes all over with a fork. Place into the microwave for 10-12 minutes, flipping once through.
- Meanwhile, into a bowl add cream cheese and Smithfield Anytime Favorites Diced Ham.
- Next, add in mustard, cumin, garlic powder, pickles and swiss cheese. Mix to combine.
- Once the potatoes are cooled, cut in half lengthwise and scrap out the middles, leaving a border.
- Add the potato flesh to the cream cheese mixture and stir to combine thoroughly.
- Add potato mixture into the wells of the potatoes and top with additional Swiss cheese.
- Place into the oven and bake for 8-10 minutes or until cheese is melted and potatoes are warmed through.
